So, Bluebell suggested a thread like this might be of interest, so I figured I'd kick it off. I've mentioned in a couple of places that I'm a professionally trained baker and patissier, and I LOVE to talk about baked goods. I have SO MANY recipe books, and haven't made enough things from them all yet. The problem is, I have no-one to feed them to, and I'm trying to lose weight! So not really a good plan to bake like I want to and then eat it all..... lol

So if you need a recipe, have a problem with a recipe, just want to talk about an amazing cake you had, go for it!

Bluebell, I lived and worked for three weeks in Iceland and 3 weeks in France as part of my training. BEST experiences I've ever had I think! I discovered so many new products and techniques, tasted so many new foods - it was amazing! I ever got to teach them some new products and gave them some new ideas too. I introduced scones, bakewell tart, and treacle tart to Iceland. And truffles to the little bakery in France I was in as a way to use up their crumb wastage.

But the different flavours of the breads and the cakes was what stood out. I don't know about the rest of the country, but Leeds is definitely missing a good and proper cake shop. I've found a good bread shop, but that's one in the whole of Leeds. And there are no cheese shops either! There's too much convenience and too many supermarkets with the cheap bread and cakes that are full of the cheapest ingredients and substitutes, as well as additives and preservatives.

The difference even between the fast and 'cheat' bread I made at college and the supermarket stuff was night and day. The proper stuff I made, wasn't even comparable.

I did a competition while at college, and I came up with a rhubarb and spelt loaf that was totally unlike anything else you get..... anywhere. Then I made some amazing lemon and coriander rolls, and some cheese and mustard rolls. OMG, those cheese and mustard rolls....... I need to make them again. They were outstanding!

    I know it seems disgusting in our health-obsessed age but I really like pastry made with lard and butter. Alright, shoot me then! My mum used to make apple pie with Bramleys  but not pre-cooked, sliced straight into the pastry with demarara sugar. God it was lovely.

  • Yeh, but lard adds an awesome taste to it! Lol

    Tea tonight is currently cooking. I'm doing rice infused with turmeric and cayenne pepper. Which will then be mixed with flaked smoked peppered mackerel, flaked smoked haddock, and mashed soft boiled eggs.

    Hi Lass

                  As always you are brilliant at explaining everything! You know I never even thought about the apples! Very important that! I usually use eating apples because they are sweeter and any cooking apples I ever used seemed to go mushy very quickly, May I ask which canned apples do you use? Certainly saves work!

    Ah, Lass, I knew something was up! I have lost track of you on this site so I haven't read what the Nurse said about your leg but if you are happy with it and it has healed that is the main thing. Oh Lord, you do have a lot on your plate at the moment I wish Dr would not say there is something up with whatever and then you have to wait to find out! Why can they not just say they want to have a review" It really is nerve-racking and does not do any of us any good. I remember once a GP having me up the walls over blood test results and it then turned out to be a false positive! I also had a friend who went through the same

    Yes, the womb procedure is not very nice in itself but the added worry must be hell for you I pray the extra pain is nothing sinister wombs can get infected so hopefully that is it. When are your appoints Lass? please keep in touch and let me know as I often think of you and really admire how brave you are and how you cope

    I am here still recovering from the Radio it has not been bad just still working away over 3 weeks later! Also no sign of my hair falling out yet! Next up to tackle is my Liver mets half of them are HER2 so drug of choice is Herceptin fine except not good if you have a dodgy heart like me so I have to have a heart echo  to see how it is functioning if it's holding its own I can go on the drug if not I will have to see if the Lerrozole can control the spread I will just have to wait and see and what will be will be I have a feeling my liver is starting to act up as I have a lot of digestive issues compared to normal but there again my appitie has returned so could be just my stomach coping with the extra food. Lord it never ends for us does it

    Tbh, I use whichever can I can find. I was making one for a family gathering at Christmas time and every shop I went into just had a space where the apple pie filling was! I think I ended up traipsing round 5 different supermarkets until I found some! I think it was Princes I ended up with, and it worked fine.

    Also, when it comes to apples, the heat in a pan on top of the stove is different to the heat in the oven. You're also agitating them in a pan, which breaks down the cell structure. As I know some folks like to cook down the apple a bit before putting it into the pie.

    When the nurse took the stitches out, her first comment of it when she saw it was along the lines of - "Oh my goodness! They really took a chunk out didn't they!". Then when I went back a week later for a wound check, she insisted on telling me a few times about what a horrendous scar it was going to be, because it's opened a little down by my knee. She even demonstrated with her hands. Now, if I were more delicate about it, or it was in a more obvious place, that would have really upset me. As it is....

    I think that looks pretty darn good! (Click to make it bigger if you want. Made it small so as not to shock/gross anyone out. Lol) Plus, it's only ever going to see the light of day when I'm swimming. And if I'm in a swimming costume, there's a lot worse to look at than a scar on my leg! Lol

    I get letters through from the GP asking me to make an appointment, but I've been to so many that were a waste of time, I now phone and ask why they want to see me. See if it's worth a £7 round trip in a taxi. So for blood results, I've asked for a phone appointment on Tues afternoon. Hopefully it's just that someone has seen my T4 is too high and my TSH is too low, and they've forgotten that that's normal for thyroid cancer patients as we need to have TSH suppressed - which automatically raises our T4.

    I can't remember if I mentioned. But I chased the mole test results on Fri there. Apparently something was dictated on Thurs, but the secretaries are 2 weeks behind in typing up the dictations. But as I'd called, the lady I spoke to said she'd type it up that day. But if I'd not called, it'd be another 3 weeks before I got the results. But they should now come this week sometime.

    Then the womb chomping - that' seriously what the wee machine does - is on Wed afternoon. Before I strip and assume the position however, I'm checking what mood she's in. As last time she did my Hysteroscopy, she was frustrated and rushed, and hurt me quite a bit - after the first two were completely painless. So yeh, I'd rather not have a repeat of that, not when there's a margin of error of mms as she's removing the lining.

    Fingers crossed your issues are fixable, and easily so. Very glad your appetite is picking up again and the radio is still doing it's thing! Long may it continue! And my fingers are crossed that liver and heart behave themselves and don't start craving attention too!

    Hi Lass

                 Thanks for the info on the apples and I never realized the difference between stove top versus oven cooking! Yes, I do cook off my apples a bit beforehand! I will keep that in mind!

    I had a close up look at your wound and I agree it is good! Very clean and healthy which is what counts a little open one end so keep an eye on that it may just be slow closing but sometimes that's a sign of a little infection although the skin around it is pale, lord what a silly Nurse! Sorry but luckily you are like me and healing comes before vanity plus I doubt you will have a bad scar! Really where do these Nurses get their training those thoughtless and I may add unprofessional remarks could have a very negative effect on a lot of people plus not to mention a lawsuit from some people!

    Oh Lass I am so sorry to read of the discomfort you went through on your last womb procedure I have to say it is rather like a smear test some of them have you in agony while others are so skilled and gentle it is a breeze yet if you moan or complain it is always the patient that is to blame never the medic! Fingers crossed she is in a good mood and has left her own personal issues at the Hospital entrance I would mention how bad it was the last time as unless something else is going on it should really be the same each time

    It is terrible that results are so far behind and luckliy you phoned to chase them up I suppose lack of funds for overtime has them behind in their typing, you can always ask your Dr to chase them for you although i see you have issues over your tyroid results and do not be surprised at that because it amazed me when I came here first how many Drs have such a poor understanding of thyroid function I think it is because they only ever review TSH results and not the full panel back in Dublin they do the full Thyroid screening for everyone so GPs need to be able to fully understand them 

    Ah thanks Lass, as I say it is in the lap of the Gods so all is dependent on heart function I will also need a ct scan really to review if anything has changed yet, Yes I am enjoying my food no end the radio was a brilliant success Double vision gone taste buds back worst of headaches gone and hearing improved! Clatterbridge Cancer Center really did a wonders for me! Talk soon my friend x

    Hi Lass

    that sounds delicious! My ex made me a curried rice dish with veggies the other night and I added some cooked cod and prawns to it went down a treat! Loving the rhubarb pastries! I made a Russian pie once it meant adding orange juice and ginger to the rhubarb! very nice but the juice is inclined to kill off the rhubarb taste a bit

    I am 100% behind you on lard in pastry I always use 50% Trex to 50% stork and I find it makes a lighter pastry especially for savory pies and I add an egg to sweet pastry sometimes. I found a very handy tip once for making flaky pastry instead of dotting and layering as you do instead you freeze your fat and grate it into the flour in a bowl that way it stays in dot! I never tried it but always remembered it!

    Has anyone looked at the suggested menu and recipes on the Macmillan site? there are lots of great tips for meals and some very tasty meals all geared towards the Cancer patient what I love is how quickly they can be made! Also tips for anyone with a sore mouth or loss of appetite, I am going to make the almond and cherry cake sounds lovely and a simple cake to make! Also the first cool day I am making my SCONES!! lol

    I always use the grated fat method for sausage rolls. It’s brilliant!
