I'm 7 months post RT and gradually eating different things although I have no appetite and cant eat more than a quarter portion of dinner. This may be due to having 2 Fresubin daily but I need the calories so that I can have my rig removed once I put on weight.
i brought an Indian takeaway recently which was the mildest curry with rice and sag aloo and I wasn’t able to eat any of it due to my mouth feeling like it was on fire. It really upset me as apparently it tasted lovely.
How long does it generally take to be able to eat curries after RT?

I managed a Korma at 6 months but we are all different.
I make my own from scratch so I can vary the heat but I guess I was at Jalfrezi stage by a year. Nothing hotter even now though

I was doing mild curries after a year, 2 years or so onwards I can do most curries, not Vindaloo, plenty of water or a low alcohol beer with curry, trial and error to start with, pakora is still a bit of a tough ask for some reason.

15 months out of CRT and I still avoid anything with chilli in it as the slightest taste and my throat closes down. I hope to get there someday as I love spicy foods and want to travel to Asia... But in the meantime my wife makes mild curries that manage to be palatable but use alternatives to the chilli.

We are all so different. I am 2.5 years after treatment and I cannot have any spicy food however I make my own curries (very very mild but tasty) and my sons can add their own spice if not strong enough for them. I can have some Chinese food, even though I cannot eat sweet and chilli sauce , I have found out that I can tolerate sweet and sour sauce. Difficult to find in shops but easy to make. When I eat salad I make my own vinaigrette with honey, vinegar /lemon juice, olive oil, herbs and a tiny amount of water to help with the acidity. I will probably never eat again everything I used to but I have progressively been increasing the range of food I can enjoy and carry on introducing more dishes to my repertoire.
You are only seven months post RT, I think you are doing amazingly well.

I’ve accepted that an Indian is a no no for me. I’m 7 years and any curry still sets my tongue and mouth on fire. I can make my own using aromatics cumin coriander and coconut milk. So I settle for those. I can do Chinese again I go for non spicy ones. If I’m honest it sound are easier for me or I can do Spanish but only dulce pimenton the picantec ones burn. It’s early days for you in scheme of things. Try making your own korma then you are in control of spices.
