    Well there you have it in the title No measurable disease, let’s hope this is the start of remaining clear for a long time. 

    To recap this last cancer episode, in April 2018 a scan showed an enlarged lymph node so it was suggested by an oncologist I had never seen before that I should have surgery to take it out. However logical it may seem to anyone reading this, it was not logical to me as back in July 2015 when I was diagnosed with metastatic melanoma too many nodes were affected and surgery...

    Cajun spiced salmon and prawn

    Very tasty and easy to prepare fish dish. If you follow the recipe verbatim, it is quite spicy which may not suit everyone. If you want to tone down the spiceiness, omit the cayenne pepper and the chili flakes. If you want to turn the heat up, substitute Szechuan pepper for the black pepper. Best of all, this recipe only needs 1 pan for the salmon and the prawns and 1 for the rice.

    • 4 salmon fillets

    Finding out you have cancer can be an incredibly emotional and challenging experience. There’ll likely be more than enough questions and concerns running through your head without having to worry about the small things - such as, “what should I bring with me to the hospital when I go for treatment?”

    I’ve compiled suggestions across the Community from our members, and put them together to form a small check-list.

    Slow cooker vegetable soup

    A very simple but nutritous vegetable soup that is delicious with a crusty loaf. A winter favourite that can be made early in the day and is ready for an evening meal (plus it makes the house smell great).

    Serves : LOTS

    Preparation time : 20 minutes

    Cooking time : 4 hours

    INGREDIENTS

    • 3 sticks celery
    • 1 swede
    • 1 turnip
    • 1 parsnip
    • 1/4 cabbage
    • 1 brown onion
    • 1 can diced tomato
    • 2 medium tomatoes
    • 4 small baby potatoes
    • 3 tbspn barley
    • 1/2 cup soup mix (bean, lentil, legume, etc.)
    • Vegetable stock

    Tuna 4-in-1

    Versatile but simple tuna based recipe that can be served as a dry salad, wet salad, wrap or as a tuna "canneloni".

    This is very much a "seat of the pants" recipe and everyone I've given it to has modified it to suit their families tastes. Some only use 1 can of tuna, some substitute baby spinach for the shallots, some omit the olives, some use highly flavoured tomato sauces and some prefer plain old ordinary passata.

    Slow Cooker Cabbage Roll Soup
    A delicious soup but if you have a smaller slow cooker (most are 4 litres or smaller) you will need to adjust the quantities as this is based on a 6 litre slow cooker. This is very, very filling and , if the vegetables are diced finely, very easy to swallow. You can run the completed soup through a blender if there are any swallowing issues.
    Serves : LOTS
    Preparation Time : 20 minutes
    Cooking Time : 3 hours

    Slow Cooker Chinese Pepper Steak
    Simple to make and delicious with rice. It's not overly hot as it only has 1/4 teaspoon of black pepper, but you can add more black pepper, or substitute with cayenne pepper, schizuan pepper or chili paste or if you like it hotter. If you have issues slicing the beef thinly enough, place it in the freezer the night before and then slice it while frozen - much, much easier. You'll need to allow additional time for the frozen beef strips to thaw.

    Really, really tasty and creamy. This is a favourite of the whole family, from Nanny down to the grandkids. And the neighbours usually drop in if they smell it cooking.

    Tuscan Chicken

    Lovely fresh lemony taste and very easy to make. The quantities below will completely fill 1 large and 1 medium baking tray. You will need to cram everything in to get them all to fit, but this is how I was shown this recipe and it really works. In reality, these quantities will feed 6 but we usually make this amount for 4 so we have plenty of leftovers for the next day.     I was going to say that I have suffered cancer, but I haven't. I've put up with it, which is hardly the same. I've known it was there, have seen its picture, seen the way my stomach changed position when a third of my lung was removed and my diaphram moved up to fill the new gap.
