Tuna 4-in-1

Versatile but simple tuna based recipe that can be served as a dry salad, wet salad, wrap or as a tuna "canneloni".

This is very much a "seat of the pants" recipe and everyone I've given it to has modified it to suit their families tastes. Some only use 1 can of tuna, some substitute baby spinach for the shallots, some omit the olives, some use highly flavoured tomato sauces and some prefer plain old ordinary passata.

It's really up to your families tastes and preferences or the nutritional requirements of your OH.

Preparation time : 15 minutes

Cooking time : 30 minutes

INGREDIENTS

  • 2 cans tuna in brine
  • 1 bunch shallots
  • 1 bunch bok choy (or any other Asian green)
  • 1 red or yellow capsicum
  • 1 jar sliced black olives
  • 1 jar tomato passata
  • 1 1/2 cups shredded cheese
  • 1 jar whole egg mayonnaise
  • Lavash or similar flatbread

INSTRUCTIONS

DRY SALAD

  • Chop shallots into 1cm pieces and put in large mixing bowl
  • Dice capsicum into 1cm pieces and add to bowl
  • Roughly chop bok choy and add to bowl
  • Flake tuna into bowl
  • Drain half the jar of olives and add to bowl
  • Add shredded cheese to bowl
  • Toss all ingredients so they are thoroughly mixed

WET SALAD

  • As per instructions for DRY SALAD
  • Add whole egg mayonnaise to bowl
  • Stir mayonnaise through the salad mixture thoroughly

TUNA WRAP

  • As per instructions for DRY SALAD & WET SALAD
  • On a piece of flatbread, spread a thickish layer over half of the flatbread
  • Place several spoonfuls of the wet salad mix across the end of the flatbread with the tomato on it
  • Rollup reasonably tightly and cut to desired size
    Note : If continuing on to make it as a hot meal, do not cut the tuna wraps

TUNA CANNELONI

  • As per instructions for DRY SALAD, WET SALAD & TUNA WRAP
  • Preheat over to 200 degrees
  • Pour a thickish layer of tomato passata over the base of a baking dish
  • Arrange the rolled up tuna wraps into the baking dish
  • Pour more tomato passata over the tuna wraps
  • Sprinkle remaining sliced black olives on top of wraps
  • Spread remaining shredded cheese over the lot
  • Place the baking tray in oven for around 20 minutes or until cheese has melted
