My wife has Nasal Oesophageal Cancer and has had 6 cycles of Chemo and is now starting 7 weeks of radiotherapy and weekly chemo. My wife is starting to become a bit down with the fact that she has a horrible taste in her mouth from the treatment. If anyone can suggest any ways in which you have found coping mechanisms to make things more tolerable I would be most grateful for your advice. Thank you.

I would speak to your oncologist who should be able to prescribe a mouthwash for you.
When I was going through chemo everyhing tasted very salty.
I used different mouthwashes and persevered with this.
I also would put one little million sweet in my mouth to change the taste in my mouth.
Unfortunately you will just need to persevere - nothing worked for me. I just needed to manage best as I could.
My hubby and kids would make fruit smoothies to help me increase my fluid intake so I would drink these as this helped to flush out the chemo and move my bowels.
I hope you find a solution.

Welcome to the forum. I woudl suggest natural herbs like parsley or coriander, to be chewed on and maybe spat out as they can be hard to digest. Alternatively a combination of herbs of your wife's preference brewed into a tea...
I do hope her treatment is going well, even though she has this negative side effect
