I have been undergoing immunotherapy for the past 2 years with no side effects and good results. I feel that I don't need "cancer cover" insurance as the likelihood of a sudden problem is miniscule, and if anything did happen I'd just jump on a plane and come home (from france). Every insurance policy I've ;looked at requires you to declare the condition then tells you how much the policy would be with cancer cover included. I can't find an option where I declare the condition then say I don't want cover for it.
Any ideas?

Have you tried phoning any of the companies on the recommended companies thread rather than going online for a quote?
My insurance was via my partner’s bank and I tend to phone them every time before a trip with an update on my situation. I declared everything at diagnosis and they paid out on a claim at that point. Then I had a NED scan after treatment but they wouldn’t cover me at all for cancer at that point as the holiday was less than 6 months after my scan.
They would cover me for everything else, so I accepted that and went on holiday. So there are policies which can exclude cancer cover but I’ve always found phoning the most straight forward way to deal with my company to be sure they were aware of everything and I could accept the risk.
