Hi Stella, that was one of my last meals in Thailand, not too spicy and delicious. Mrs Patrick does cook it here from time to time using tinned coconut milk - not sure there is an alternative unless you buy a coconut and do it from scratch - a lot of work though but doable. The old Thais still know how to do it. Mrs Patrick just said you could try using ordinary cream and season to taste. Might work.

Lee I use ‘Iced kitchen’ curry pots. They are great for all sorts of curries. They are in the freezer section of the supermarket. I get them via Ocado.
Hi Lee, I'm going to put my reply to you in the Gardens and Gardening thread as my answer is quite long. This is the best time to start as the soil still has a little warmth in it. The cloves that you plant will send out roots before the cold weather comes. For the best results don't use shop bought garlic as it may be harbouring disease. Best to buy from a grower such as The Garlic Farm from the Isle of Wight or any seeds company like Fothergill's, Thompson and Morgan or Sutton's. You could go to a good garden centre also.
Not all varieties grow well, I would grow a softneck type such as Solent Wight
