Chat about food and recipes.

  • Actually this is what I ate yesterday.  I had baked pork chops (mixed mayonnaise and chutney and put this over them.  I had spiced potatoes wedges done in the actifry.  I had butternut cut into pieces in a casserole dish with black pepper and garlic butter and steamed gem squash.  For me cooking is about being easy and quick.  I am certainly no gourmet chef Joy

  • Hi   I’m with you, I like quick and easy, and I use my actifry a lot. When we have pork chops, I spray with olive oil and then sprinkle this over, in the air fryer for 18 minutes, they are lovely.

  • I made red pepper pesto sauce yesterday and it was really quick and easy. Just put red pepper from a jar , parsley, cashew nuts, olive oil in a food processor and smooth it out. Then add Parmesan cheese and salt. 5 mins work!

    Had Peruvian food today in London but  forget to take photos. They are quite delicious, a bit of fusion of South American and Japanese style of food.

    Sounds good! Never ate butternut squash as think they are quite hard to prep? Do they taste like sweet potatoes? 

  • Hi   i recently discovered butternut squash. Hubby was diagnosed as diabetic and the nurse advised cutting down on carbs. So the first thing to go was white potatoes. Instead I cut butternut squash into cubes, it’s not as hard as it looks, spray with olive oil and pop in the air fryer, they only take about 12 minutes. They are sweet like sweet potatoes but a different texture, and I actually prefer it. I also put it in curries, I make a chicken curry with added carrot and butternut squash which is lovely. I also make soup, I have a soup maker which is one of my best buys! Butternut squash, sweet potato, leek and carrot, some veg stock and it’s done. Bellissimo!

  • I love butternut,  they are not hard to prepare if you have a strong potato peeler Grin.  Like Chelle says I put it in a lot of things as it thickens stews etc and gives a nice texture.  I also have a soup maker and make butternut soup.  I also love gem squash but you have to order from the farm direct as you can't buy in shops and they are seasonal.   Maybe Tvman can grow some for us.  Last night we had smoky paprika sausage and beans.  I made it before we went to the pub so just had to heat it up and had it with hot petit pains rolls.  Very quick and easy, that's me Joy
