Hi everyone. I’m a mum of a 13 year old girl who was diagnosed with thyroid cancer early February. She had surgery to remove her thyroid and all lymph nodes on one side of her neck. We are now 4 days into her low iodine diet in run up to uptake scan (a week off her meds). I’m struggling with the what’s acceptable amount of salt in foods. A lot of the milk substitutes have sea salt in them except coconut milk which she hates. I’m emailing different companies asking them what type of salt they use in their products to make sure it’s safe. It’s a minefield. What 0.0?g of salt is ok. Bread is a hard one too. Trying to make my own but failing miserably. She eats fruit and veg so dinners are not a problem. It’s the rest of the day. Any advice would be appreciated. Thank you in advance x
Hi, Not sure if this would help but I’m a rubbish cook but used this recipe for bread when I was on low iodine diet a couple of years ago, it does have salt in it but if I remember rightly you’re okay as long as it’s not iodised (although check as this might have changed) I didn’t have the tins and stuff but just shaped it and cooked on a baking sheet and it came out okay, I ate it with 100% nut butter, honey, mashed avocado or mashed banana. www.bbcgoodfood.com/.../bread-four-easy-steps
Again check all of these things are still okay but I ate fruit, salt n shake crisps without the salt on, matzo crackers and 100% nut butter, a bit of dark chocolate now and again.

I am so sorry to here what your little girls has had to go through. I have a daughter myself at her age. She is very brave. I have just had my RAI this week. I didn't have to come off my meds as I was given Thyrogen injections on Monday and Tuesday and had my treatment on the Wednesday. Maybe it's different for your daughter as she's so young.
I found rice milk was nice and easy to take on cereal. She might like it. I also bought gluten free bread and diary free butter.
