So, Bluebell suggested a thread like this might be of interest, so I figured I'd kick it off. I've mentioned in a couple of places that I'm a professionally trained baker and patissier, and I LOVE to talk about baked goods. I have SO MANY recipe books, and haven't made enough things from them all yet. The problem is, I have no-one to feed them to, and I'm trying to lose weight! So not really a good plan to bake like I want to and then eat it all..... lol
So if you need a recipe, have a problem with a recipe, just want to talk about an amazing cake you had, go for it!

Bluebell, I lived and worked for three weeks in Iceland and 3 weeks in France as part of my training. BEST experiences I've ever had I think! I discovered so many new products and techniques, tasted so many new foods - it was amazing! I ever got to teach them some new products and gave them some new ideas too. I introduced scones, bakewell tart, and treacle tart to Iceland. And truffles to the little bakery in France I was in as a way to use up their crumb wastage.
But the different flavours of the breads and the cakes was what stood out. I don't know about the rest of the country, but Leeds is definitely missing a good and proper cake shop. I've found a good bread shop, but that's one in the whole of Leeds. And there are no cheese shops either! There's too much convenience and too many supermarkets with the cheap bread and cakes that are full of the cheapest ingredients and substitutes, as well as additives and preservatives.
The difference even between the fast and 'cheat' bread I made at college and the supermarket stuff was night and day. The proper stuff I made, wasn't even comparable.
I did a competition while at college, and I came up with a rhubarb and spelt loaf that was totally unlike anything else you get..... anywhere. Then I made some amazing lemon and coriander rolls, and some cheese and mustard rolls. OMG, those cheese and mustard rolls....... I need to make them again. They were outstanding!
That’s a very long wait. You must be exhausted. Why not give yourself a break and buy a Colin the Caterpillar cake from M&S?

Rather than a rainbow cake, do a secret centre cake.
So make 4 layers of any cake you like - I like using chocolate cake - then put the bottom layer on the board/plate. Cut a hole in the middle two layers, right in the centre, and eat the cut outs with a coffee.... Lol. Put them on top of the bottom layer, then fill the hole with Smarties, or any colourful sweet. Then pop the top layer on - obviously with icing between each layer to stick them together. Then cover the cake in icing, and whatever decoration you fancy.
I promise it's faster and easier than it sounds, and it looks amazing as you cut in, remove the piece, and all of the sweets come pouring out of the middle of the dark coloured cake. Sometimes trying to get the cake batter to keep a nice vibrant colour for a rainbow cake, just doesn't work and it all looks a bit dingy.
As for the top, there are all sorts of rice paper figures on Amazon if the 2 year old has a fave tv show or animal. If you've more cash to splash, there are plenty of people making icing/fondant animals and characters too.
Though tbh, I often go to the pound shop and see what little toys they have and bung them on top and round the side with a candle and some words. Means they have something to play with after too. Lol

So, because I'm insane, I thought I'd bake a cake this morning.....
I had the meetup yesterday that had me in bed before 11 - usual bedtime is about 2 - after a nap on the couch as soon as I got home. Then today there was the mouse hunt planned, so figured I'd bake so that there was something nice to look forward to after we were done.
So I made this experimental cake....
It's a gluten free chocolate and mushroom cake!! It tasted really nice actually, with a really good texture. 250g of mushrooms in the cake, so a decent amount!
Went down well halfway through the monster task we discovered in the attic..... I'm sorry, but there's no other way to say it, other than HOLY SHIT!! 3 20kg bags of dog food - emptied. Shit and piss everywhere. One carpet has been cut up and binned because it was beyond saving. The smell was terrible too. That's been 6 hours of three of us shifting boxes, hoovering, and cleaning. I'm really annoyed, because people have regularly been putting boxes up there for her. So how did none of them notice the smell and the carnage before now??!!
Anyways, it's being dealt with, the hole we think they were coming through has been stuffed with wire wool, all the dog food has been removed, nothing else was touched, so hopefully everything is now under control.
But still........... FFS!!

Recipe for anyone feeling brave. Please do let me know if you make anything from my recipes. I'd love to hear how well, or badly, they go as well as what you think of them when you chow down!
250 g mushrooms
250 g dark chocolate, chopped
250 g ground almonds
200 g butter
150 g brown sugar
4 eggs
1 tbsp. baking powder
1 tbsp. cocoa powder
1 tsp. instant coffee granules
Preheat oven to 180C
In a blender/food processor blend the mushrooms and chocolate until they are very fine and paste like.
Cream the butter and sugar together, then slowly add the eggs.
Fold in the dry ingredients.
Fold in the chocolate and mushroom mixture until all combined.
Pour into your tin and bake for 40 - 50 mins. Leave in the tin to cool completely as it needs to set.
You could make a soft ganache to go on top, but I think that would be too sweet. I was going to make a chai cream to go with it, but I was far too exhausted for that, and it's fine on its own.

I've not eaten one yet , but I have licked the bowl after making the curd.... And it's gorgeous!! There's even a little bowl of just curd left. So I might need to buy some bread to eat it with!
Never used a cranberry before, so bit of a learning experience. But really happy with how they turned out.
I think with the walking planned for tomorrow, I'll be able to afford to eat one calorie wise for tea! Very much looking forward to it and hoping I can manage to only eat one! Lol
