So, Bluebell suggested a thread like this might be of interest, so I figured I'd kick it off. I've mentioned in a couple of places that I'm a professionally trained baker and patissier, and I LOVE to talk about baked goods. I have SO MANY recipe books, and haven't made enough things from them all yet. The problem is, I have no-one to feed them to, and I'm trying to lose weight! So not really a good plan to bake like I want to and then eat it all..... lol

So if you need a recipe, have a problem with a recipe, just want to talk about an amazing cake you had, go for it!

Just continuing on the chat from elsewhere....

Bluebell, I lived and worked for three weeks in Iceland and 3 weeks in France as part of my training. BEST experiences I've ever had I think! I discovered so many new products and techniques, tasted so many new foods - it was amazing! I ever got to teach them some new products and gave them some new ideas too. I introduced scones, bakewell tart, and treacle tart to Iceland. And truffles to the little bakery in France I was in as a way to use up their crumb wastage.

But the different flavours of the breads and the cakes was what stood out. I don't know about the rest of the country, but Leeds is definitely missing a good and proper cake shop. I've found a good bread shop, but that's one in the whole of Leeds. And there are no cheese shops either! There's too much convenience and too many supermarkets with the cheap bread and cakes that are full of the cheapest ingredients and substitutes, as well as additives and preservatives.

The difference even between the fast and 'cheat' bread I made at college and the supermarket stuff was night and day. The proper stuff I made, wasn't even comparable.

I did a competition while at college, and I came up with a rhubarb and spelt loaf that was totally unlike anything else you get..... anywhere. Then I made some amazing lemon and coriander rolls, and some cheese and mustard rolls. OMG, those cheese and mustard rolls....... I need to make them again. They were outstanding!

  • Yeh, the wound is open because when the stitches were removed, there was a big scab in the middle. So the edges weren't actually touching to heal. So it healed around and under, which is why I now have a mini vagina by my knee....... LOL. Sorry, my sense of humour there!

    And yeh, no chancemy doc would do anything. He's RUBBISH! lol. But the results should have been in the post on Friday there, so hopefully they will arrive here tomorrow or Wed. The majority of my mind says that everything will be fine and it will come back benign. But there's that small part that looks back over the last 5 years and just laughs at the majority. lol


    Speaking of cooking in orange juice - cook down dates in orange juice and use it as a paste in a cake or a tray bake or something. Good source of fibre for those blocked up days! ;)



    I've also decided what to bake! lol. (Prob tomorrow, today I cut down tree branches, and can now barely move!) I looked through my fridge and cupboards to see what needed used, and realised/remembered I'd bought a load of avocados. So I will be making..... (Energy dependent)


    Avocado, Lemon, and pistachio cake.

    Chocolate avocado cake with avocado icing.

    Savoury avocado and sweet potato seeded muffins.


    Should be exciting! :D



    Now, I just need to find people to feed it all to! lol

    Hi Lass 

                  I just love your sense of humor! LOL, It will close over in time, however, it is not in a bad place so at least you healed well which is brilliant! Oh Lord sorry about your Dr there are a few of them around and I often feel very sorry for the NHS having to pay top salaries to some, how shall I put this... less than competent staff. Although in theory, it is the taxpayer's money! Lord that is what we pay for!

    Lass where do you get your energy! I marvel at you I really do! please do not overdo it and especially in this heat, it reached the mid to high 20s in the north-west today! Wow, I like the sound of the savory muffins I shall be joining Spider in making my way over for tea! all sound delicious! Lass how did you end up with a pile of avocados?! If I'm not being too nosy! Or send me some and I shall pay the postage when they arrive! Oh, I would love some home baking!

  • Spider and Bluebell, if you lived close enough to pop in, you'd be more than welcome. It'd be nice to have some company tbh. Lol. Though you'd have to be ok with cats, they LOVE visitors! 

    And don't worry about me and the heat, I drink a lot every day. I did before the thyroid surgery, but since then I drink even more. The radiation I've had so far has damaged my saliva glands a bit, so I keep going dry. Sometimes even choking if there's a temp change, strong smell, just because, etc. Lol. For whatever reason, now and again, my body thinks that swallowing my tongue is a good idea. The only thing that stops it, is a sip of something liquid. It's insane.


    As for the energy, pffffft. 2 branches, 5 mins of hard sawing, then 20 mins of sitting watching my friend re-potting my plants to recover, then repeat. However, just about to take some pain killers as the spine mets have decided that sawing and sitting on the doorstep was a bad plan. Lol. Oh, and naps! Ive had three of them today. Lol


    As for the avocados - lol - I bought some at the market and never ate them. And then forgot I had them. Then was at Makro and found a bag of 10 of them reduced to a couple of quid. So couldn't resist that price!! So now..... I have something like 13 or 15 avocados needing used! XD


    However I also have an avocado plant grown from one that was eaten! He was reported today into a nice big home he can grow big and strong in!

    Hi Bluebell 

    It is completely gorgeous. I first saw the recipe years ago in the Delia Smith cookery course. I used Stork block margarine. The sausage rolls are always a massive hit, especially with my greedy boys. It is so simple, you just have to keep dipping your frozen Marge into the flour to make it easy to grate. I really don’t think I could be bothered with the traditional method now unless it was for really posh cake.

  • Made something!

    Gluten free, and some are dairy free too, avocado and sweet potato Muffins; topped with sunflower and pumpkin seeds, feta, and a dusting of paprika.

    Hi Lass

                 Hey well done! They look so tasty and healthy! I would love them as a meal for my tea! Minus the seeds as you know I cannot eat them, think I will move in beside you!

    But although I have not made any scones yet! I decided to do some work in my garden today rather then just sitting in it! Oh boy did I feel so much better in myself nothing heavy just went around armed with my snips doing some tiding then I fed my rose trees and my laws did a bit of sweeping up and general tidy! I had a gardener in to do the heavy work but you know how you like to do the finising touches! It has boosted my confidence so much and I am now planning some bedding plants for the summer after reading you had tackled a tree I thought to myself if Lass can do it so can I and I did so tomorrow SCONES! 

    Is it tomorrow you go for the procedure Lass? I will be thinking of you and be hoping it is all painless and good luck with the blood test results my love x

  • They'e not bad, a really good salty hit on the top from the feta. And the seeds are just on top, so easily picked off. Lol. No fat in them either, well no added fat that is, and just a bit of maple syrup. 

    And No, I head out in about 10 mins. Taking some muffins with me to bribe her not to hurt me like last time. Especially as this is a bigger piece of kit that will also mean a local anaesthetic into my cervix so they can get the speculum in to spread it wide enough.


    No frustrated and irritated docs today please!!
