Macmillan has a recipe collection for people affected by cancer. So for National Vegetarian Week this week, we have picked out 5 vegetarian recipes. In this blog, one of our information development nurses Paula shares these recipes, as well as some top tips.
These recipes are tailored to suit you at different times during and after your treatment. There are notes on each recipe to help you choose one that’s right for you.
Recipes
Lazy lentil soup
All the ingredients for this soup go into the pot at the same time so it’s good if you want a simple, healthy meal. This soup can also be blended to make it really smooth if you are finding it difficult to swallow or chew food.
Parsnip and Coconut soup
If you have lost your sense of taste, this soup has garam masala and ginger to give it a stronger flavour.
Spring vegetable casserole with garlic bread
This is a quick and simple casserole that is full of vegetables in a tasty sauce. If you have a dry or sore mouth, recipes with a sauce can be easier to eat. You can miss out the garlic bread if that helps too.
Broccoli Mornay
Some extra ingredients in this recipe give it a stronger flavour so again it’s great if your sense of taste is affected. The extra calories in it can also help if you have lost weight during your treatment.
Summer pudding
A pudding packed with fruit. This recipe is good if you have a dry or sore mouth or difficulty swallowing or chewing due to the lovely fruity sauce.
