Hi. Ever since starting my cancer journey I have always looked for positive takeaways. Eating lunch today outside in the sunshine I thought how nice it is that I now have time for something more than a quick sandwich. It also means I can make lunch using ingredients my good lady isn’t keen on but that I like eg chickpeas! Today I had an Egg Salad with a herb vinaigrette - lots of green veg and lettuce, some sliced new potatoes, topped with halved boiled eggs. Nice tang from the capers in the dressing. Far better than an egg salad sandwich - think the sunshine helped!
