So, Bluebell suggested a thread like this might be of interest, so I figured I'd kick it off. I've mentioned in a couple of places that I'm a professionally trained baker and patissier, and I LOVE to talk about baked goods. I have SO MANY recipe books, and haven't made enough things from them all yet. The problem is, I have no-one to feed them to, and I'm trying to lose weight! So not really a good plan to bake like I want to and then eat it all..... lol
So if you need a recipe, have a problem with a recipe, just want to talk about an amazing cake you had, go for it!

Bluebell, I lived and worked for three weeks in Iceland and 3 weeks in France as part of my training. BEST experiences I've ever had I think! I discovered so many new products and techniques, tasted so many new foods - it was amazing! I ever got to teach them some new products and gave them some new ideas too. I introduced scones, bakewell tart, and treacle tart to Iceland. And truffles to the little bakery in France I was in as a way to use up their crumb wastage.
But the different flavours of the breads and the cakes was what stood out. I don't know about the rest of the country, but Leeds is definitely missing a good and proper cake shop. I've found a good bread shop, but that's one in the whole of Leeds. And there are no cheese shops either! There's too much convenience and too many supermarkets with the cheap bread and cakes that are full of the cheapest ingredients and substitutes, as well as additives and preservatives.
The difference even between the fast and 'cheat' bread I made at college and the supermarket stuff was night and day. The proper stuff I made, wasn't even comparable.
I did a competition while at college, and I came up with a rhubarb and spelt loaf that was totally unlike anything else you get..... anywhere. Then I made some amazing lemon and coriander rolls, and some cheese and mustard rolls. OMG, those cheese and mustard rolls....... I need to make them again. They were outstanding!
I'm still going..... Lol

Oh Lord, these cakes look awesome!!! I will not be coming for tea I am moving in!! Honestly, Lass, they are delicious and it is easy to see you are a professional with the finish and all cooked to perfection not sure I have a favorite although the lemon polenta cake sounds right up my street what is the filling in the coffee kisses?
So much work but what results, brilliant! you talented lady come to Cheshire and open a cake shop! Big demand over here yet always the usual never anything different, I made some scones earlier they have been a success ever since I followed your tips!
No homemade jam but a jar of Tip Tree which is near to homemade as you will buy
Lass, have you any interesting recipes for Soya milk? Like ice cream or unusual shakes? I usually make strawberry or peach what I don't like is all the froth that seems to stay is this normal or as usual am I doing something wrong! Also can you freeze a shake? Make an ice lolly from it?

Sorry, just realised that the reply I wrote for this never appeared!
You do get more froth on a soya shake than a dairy shake because of the protein structure. I presume you're using a big blender to make them? Try using a stick blender and keep the blades under the liquid at all times, tipping the bowl/jug/pan/receptacle to make it deep where you have the blender. If the blender comes out and makes a sploodge type noise, you'll get bubbles and foam.
I've not tried freezing it, but you can def freeze fruit and water. So if you cooked down some fruit with a touch of sugar and maybe some lemon juice - depends on the fruit - then you can make a coulis. Water that down a little with some fruit juice - I'd personally say not from concentrate - then freeze in lolly moulds, or even in ice cube trays with cocktail sticks..... we used to do that as kids. Lol
The filling for the coffee kisses was just Storm, icing sugar, and concentrated coffee.
Very glad the scones are continuing to work for you! You'll soon have a name for yourself amongst friends as the lady to go to for the best darn scones around! Lol
Might bake tomorrow, depends on how I feel. Not feeling great mentally at the min after a text earlier. So prob need to do something tomorrow to distract myself.

Hey, no problem I use a stick blender but probably like my pastry making I am too rough and could cause froth in water! lol
Ah, homemade ice pops! We used to use cordial and make them in egg cups! using saved sticks and they tasted so good! Think I will make a few tomorrow!

Yup, each time it comes out from under the surface then it adds air in. So it's great if you want to whip cream for example, not so great if you want a silky smooth ganache. It's all about positioning. Lol

As for the text about results, I'll get there. I just had it in my head that there were two reasons for the excruciating neck pain - neither of which would show on an x-ray. I'm 99% sure the x-ray is the only thing outstanding for the GP, so the results must be in relation to it. I was already suspect as they mentioned numerous times they were taking 2 pics, then after the second there was a big long pause then suddenly they were taking a third. But yeh, convinced that nothing would show, and it seems something has, so just a bit anxious about what it might be, as there's not a big list of things that show on an x-ray! But not long to wait now, alarm is already set to phone them first thing.
