Hi everyone wanted to introduce myself as joining the group. I am self isolating as most are due to having a stem cell transplant after leukemia , and breast cancer.

I see from your other post in this group that you have been making bread by hand. I'm very impressed as I have to cheat and make it in a bread machine! However, I think my production is coming to a halt as I can't get hold of any strong bread flour at the moment.

Hi latchbrook really special and nice to meet you to. Do not worry about strong bread flour you can use all purpose, it works just as good its the yeast, right temperature,and kneading and rising that counts. I could not get any more flour all gone off the shelves,but i bake regularly . All that was left was spelt flour, everybody just went for strong bread flour and cleared the shelves. What they do not know is they left the best and took the worst, bleached. Spelt flour was the original bread flour used by the romans, no husk removed from the grain and ground down. I tend to use a mix of flours and do flat breads as well.Olive and rosemary and tomato.
I go the hospital tomorrow so i hope my bloods are good and there is nt loads of people waiting for a costa with no social distancing, near the pharmacy department. Or i will be using the rail of the escalator to slide down to get out faster than the steps rotating.
