    LEMON DRIZZLE CAKE

as promised - here is the recipes - i also cheat sometimes (well nearly all the time actually) instead of standing and mixing in bits at a time - i general put all ingredients in together and mix with electric mixing until nice and creay - find it is just as nice as the mixing in slowly - any way - give it a go - hope you enjoy -

    4oz Marg or Butter

    2 eggs

4oz Caster Sugar (plus another 4oz for the icing)

    4oz Self Raising Flour

Rind and juice of 1 Lemon

cream the butter and sugar, slowly add beaten eggs and sifted flour. bake in an 8" cake tin at 160'c for 25-30mins.

for the topping dissolve the caster sugar, juice and rind together and whilst cake is still hot, prick well with fork and spoon over cake and leave to cool.
