We all know that cancer feeds on sugar but it's not too easy to stop indulging if you have a sweet tooth.
I use this recipe when I feel like a little treat.... enjoy
190g whole salted cashew nuts
20g coconut flour
60g desiccated coconut [30g for the balls and 30g for coating]
4 large lemons, juice only.
1 1/2 tbsp raw honey, if you cant get this any honey will do.
2 tbsp chia seeds.
Blitz the cashew nuts in a blender until fine.
Add the rest of the ingredients [only 30g coconut] and blitz until combined into a dough
Roll out the dough and take small amounts to roll into balls, roll balls in remaining coconut.
Place balls onto a tray and place in freezer for 15 minutes to harden slightly
Remove from freezer and pop into an airtight container, keep in fridge......Enjoy
