So, Bluebell suggested a thread like this might be of interest, so I figured I'd kick it off. I've mentioned in a couple of places that I'm a professionally trained baker and patissier, and I LOVE to talk about baked goods. I have SO MANY recipe books, and haven't made enough things from them all yet. The problem is, I have no-one to feed them to, and I'm trying to lose weight! So not really a good plan to bake like I want to and then eat it all..... lol

So if you need a recipe, have a problem with a recipe, just want to talk about an amazing cake you had, go for it!

Bluebell, I lived and worked for three weeks in Iceland and 3 weeks in France as part of my training. BEST experiences I've ever had I think! I discovered so many new products and techniques, tasted so many new foods - it was amazing! I ever got to teach them some new products and gave them some new ideas too. I introduced scones, bakewell tart, and treacle tart to Iceland. And truffles to the little bakery in France I was in as a way to use up their crumb wastage.

But the different flavours of the breads and the cakes was what stood out. I don't know about the rest of the country, but Leeds is definitely missing a good and proper cake shop. I've found a good bread shop, but that's one in the whole of Leeds. And there are no cheese shops either! There's too much convenience and too many supermarkets with the cheap bread and cakes that are full of the cheapest ingredients and substitutes, as well as additives and preservatives.

The difference even between the fast and 'cheat' bread I made at college and the supermarket stuff was night and day. The proper stuff I made, wasn't even comparable.

I did a competition while at college, and I came up with a rhubarb and spelt loaf that was totally unlike anything else you get..... anywhere. Then I made some amazing lemon and coriander rolls, and some cheese and mustard rolls. OMG, those cheese and mustard rolls....... I need to make them again. They were outstanding!

  • Hmmmmmm.
    I think I want to bake tomorrow. Mum and Dad brought me some Devon clotted cream from their holiday, and it's crying out for some fresh baked scones! I thought about buying some from the Asda down the road, but I think that would end up being a disappointment. So, that leaves baking them for myself!

    Still need to go to Asda for supplies, but I won't be coming back with scones, just sultanas and milk!

    Fingers crossed the slow wander to Asda and back doesn't knacker me too much so I can't make them. I'm still pooped from my weekend.

    Anyone made anything nice or interesting recently? The last thing I

    made was a few weeks ago now, and it was a rosehip and cranberry steamed pudding. Boy did that go down well in all that miserable wet weather!

    Hi Lass 

    you cannot beat homemade scones! don't forget some jam as well! No, I haven't baked only cooking my usual boring meals...But now that you mention scones! I think I will make some tomorrow all being well I have everything except sultanas so it will be cherry scones and maybe like you if I have the strength an almond tart or tartlets so fingers crossed for both of us, I do fancy a homemade steak and kidney pie so make the pastry tomorrow and put it all together on Friday,

    I am here trying to get my weight up and because I normally eat a healthy diet all my meals are low calorie that steamed pudding sounded delicious Lass I love food like that bread & butter pud being a favorite, I sometimes put apricot jam on the bread for a change have you any twists on it? I still need to make those cheese rolls! I'm waiting for my food delivery on Friday! So we shall see what happens! I actually would not mind if my rolls flattened lol lass the way I bake even using the correct cheese they would have anyhow LOL

  • Hey Bluebell,

    While I was in Scotland we went to a farm that was set up for kids, but which had a farm shop too. I spotted a jar of blueberry curd that had my name ALL OVER it. Lol. I also have some homemade raspberry jam in the cupboard too. And some other random homemade jams and marmalades dotted about.


    Mmmmmmm, anything with almonds in is awesome imo! Do like a nutty bake! Though I much prefer a steak and kidney pudding to a steak and kidney pie - but I'd never turn my nose up to a pie. Lol. Next time I'm at the market, I might need to pick up some kidneys. I do love them, especially with a fried egg or two with a nice runny yolk!


    I'm not a massive fan of bread and butter pudding tbh. But spreading nutella on the slices definitely makes it better. Lol. Or you could sprinkle some brown sugar and cinnamon on the slices, and sprinkle in some sultanas too. Or spreading the bread with peanut butter and slices of banana isn't bad either. Then you can mix up the bread you use too. Brioche is popular to use, or even croissant, but last time I made it, I made it with a panettonne.


    Sadly with all my treatments, issues, pills, pain, and reduced mobility - my weight has skyrocketed. I've gone up 4 dress sizes in the last 5 years. So I'm currently trying to shift it to make the womb cancer easier to suppress, and/Or to make surgery less high risk if I need a hysterectomy in a few months time, should the suppression not work. I've lost 2 stone since Christmas, 8 more to go. But the 2 I lost meant my thyroxine was too high, which had me black out as I was going up the stairs. Hurt my shoulder/back, which meant the small amount of exercise I was managing, stopped - which meant the weightloss stopped. So really need to feel better so I can start the exercises up again.


    And LOL! Well, even flat rolls will taste nice. They just might have an odd texture! ;)


    Enjoy the baking! We should compare results after we're done! Make mouths water. Lol

    Hi Lass

                I should have known you would have lots of jam! Blueberry sounds good! Farm produce is always lovely even if a bit expensive I love the homemade tomato sauces Hey, great ideas for the bread & butter pud! you have inspired me! Thank you yes my mum preferred Steak and Kidney Pud to pie but I find anything with suet very hard to digest so pastry it has to be! Ah, a fellow offal lover! I always enjoyed liver kidneys and my favorite stuffed heart! Lamb for heart and liver but a fresh pork kidney with fried onions! now your talking they say there is too much cholesterol in offal well I never had problems with it! 

    I was the only one at home who ate it and used to put the rest off their meals lol I never got around to my baking today I was busy with the house early than I had a visit from my MacMillan nurse! The first time we met a lovely young woman who was a mind of information and very supportive towards me which was lovely she put me totally at ease and boy had she done her homework on my skull Mets!  It is fairly rare what I have so it was great to have someone I could talk openly to, then my friend called after that I needed feeding! suddenly I realized it was after 5 pm and I had been up since 6 30 am so really wreaked 

    So baking shall commence at the weekend as I have a hospital app tomorrow that usually tires me I think its the sitting around and apprehension!

    Ok lass suggestions about ideas to turning boring minced turkey into something tasty please but no tomatoes or spices can be used any ideas as always gratefully received

    I'm so pleased the Mac nurse knew her stuff, especially if what you've got is rare and so it's hard to talk to folks about! That's so awesome!


    I've never had stuffed heart, but my Mum did used to do us casseroled heart that was yummy! I make an awsome chicken liver pate with a little (somtimes a lot) of sherry in it! Not a massiver liver fan, but all the rest are yum! My brother took me to a restaurant a couple of years ago that did chicken hearts on a skewer and basted in butter as they roasted over a flame..... I ate SO MANY of them! They were so good!


    I didn't get around to the baking either. After dragging myself out of bed at about 1 - lots of pain today - I then showered. Had to rest for a couple of hours after that,then dressed and walked to Asda and back - about 1400 steps, so something I'd not have thought twice about before. However on the way back, was having bad spasms in my back and feeling a bit dizzy, with stabbing pains in my head. So put everything away and then sat down...... and fell asleep. Didn't wake up too long ago, so grabbed leftovers from last night and I plan on doing nothing for the rest of the night. So we'll see how I feel tomorrow, because dammit, I want fresh scones! lol


    When you say no tomatoes, is that no tomatoes in any form at all? Or just no real tomatoes? So, are tomato sauce or condensed tomato soup ok? Or are they out too? I have a couple of things in mind, but if they're out I'll need to think of what you could swap them out for. :)

    hello all,

    i have a dilemma. I’m hungry. In my fridge lies a beautiful home made apple, honey and almond pudding . It needs to be eaten soon. Contains about a million calories per portion with thick cream. Now, very boringly, French it appears my blood glucose and ketones are too high. Not been diagnosed with diabetes. Not overweight. To eat or not to eat?

    Sorry if that didn’t make full sense, due to use of ‘French’.  I absent-mindedky tuoedvitbin after getting a text from one of my sons, saying ‘what is the name of that disgusting French cheese you like? I mean the really disgusting one.’

    Yes, I am lucky but hey she is a MacMillan nurse and they said they were going to match me up with someone just shows how professional the organization is! She works at the Hospice but not for the Hospice!I am finding there are Macmillan people everywhere! I was onto my bank the other day and mentioned my cancer suddenly I was speaking to a Macmillan trained bank official! Incredible the Bank referred to them as a specialist team! Also, my benefits lady was a member of the MacMillan team working in the Councill office! We really are so very lucky to have these highly trained people in our corner! She made my day!

    Now those flamed chicken livers sound really tasty I would enjoy them! Oh, I used to love Pate another one of my favorite foods gone off the menu due to stomach issues caused by my heart meds! Heart casserole sounds good Lass I like the texture of the meat

    Ah, Lord, that sounded a struggle to the shops! Still, you did it! Well done oh I hate when I get dizzy hope you were ok you could easily have fallen, you may be tired Lass I don't know about you but some nights even if I sleep I don't have refreshing sleep I blame the tablets and you were away over the weekend so probably caught up with you! I like leftovers! No cooking and already been tried so happy days! my fast food is usually eggs or tinned fish when I'm tired or dizzy it is sandwiches still getting protein and carbs so no problem, also casseroles etc are handy to get a couple of days out of as well

    Nothing tomato Lass  I'm alright with a squirt of sauce on my plate but any tomato based meals are also off my menu! and I used to love spag bol and the like or even a tomato sandwich so you will have to get your thinking cap on for me, please
