It’s time for another Dining with an Ostomate post. This week Debbie shares with us a TASTY AND SUPER SIMPLE ‘Carrot and ginger soup’ recipe. Here’s Debbie to tell us more about the benefits of carrots and ginger…

The benefits of carrot and ginger…

As an Ostomate, I am always looking for tasty recipes to add variety to my diet. With summer around the corner, although we’ll soon be thinking about salads rather than warming soup, my next recipe is a soup. It’s quick to make and ideal for those grey cross-season days.

Carrots are tolerated well by Ostomates, and can be included in the diet straight after surgery. They are high in vitamin A, beta-carotene, antioxidants and minerals, as well as providing fibre.

Ginger is well known for being an aid to nausea, so this soup is ideal for anyone suffering from nausea during chemotherapy. It contains vitamin C and B6, lots of minerals and helps to reduce inflammation.

The original recipe included 400g cannellini beans, which are not tolerated well in the early days of being an Ostomate. Add them in if you are able to eat them. I added a small potato to help to thicken the soup, leave it out if you use beans. Enjoy!

Carrot and ginger soup

Serves 4 to 6, freezes well.

Ingredients

1 tbsp. rapeseed oil.

1 large onion, chopped.

2 tbsp. coarsely grated ginger.

2 garlic cloves, sliced.

½ teaspoon ground nutmeg.

850ml vegetable stock.

750g carrot, sliced.

1 small potato, cubed.

Method

  1. Heat the oil in a large pan, add the onion, ginger and garlic, and fry for 5 minutes until starting to soften. Stir in the nutmeg and cook for one minute.
  2. Pour in the stock, add the carrots and potato, then cover and simmer for 20 to 25 minutes, or until the carrots are tender.
  3. Blitz with a hand blender or food processor until smooth. Season to taste.
