Recipes from Jane - Honey ice cream

A soothing treat with the natural sweetness of honey.

Honey ice cream

Preparation time: 15 minutes

Honey ice cream

Freezing time: 1-2 hours depending on method used

Serves: 4-6

Ingredients

5 eggs yolks

3 tablespoons runny honey

500ml semi-skimmed milk

250ml whipping cream, unwhipped

1/2 teaspoon vanilla essence

Method

First, make the custard. Beat together the egg yolks and honey in a mixing bowl. Heat the milk in a saucepan until it reaches a temperature that is still comfortable for you to dip a clean finger into. Remove from the heat and stir the warm milk into the egg yolk and honey mixture.
Pour the mixture back into the saucepan and heat gently, stirring all the time, until the custard thickens.
Remove from the heat and leave to cool.
Once cool, stir in the cream and vanilla essence.

Transfer the mixture to an ice cream maker and freeze according to the manufacturer's instructions.

Hi everyone,

Out of the blue my mum (who works 2 jobs and did 2 10 hour shifts the week I had to take her to hospital.) was diagnosed with Cancer of the Osophogeal cancer.

Initially they thought they had caught it early as she doesn't have any of the typical risk factors - doesn't smoke, drink, isn't obese and hadn't had any sudden weight loss.Unfortunately, further investigation led to us being told it is stage 4.

And so, her first Chemo was this week. She was fine during treatment and afterwards but yesterday I found her very weak and moving only to get to the bathroom and be sick. I called the helpline to hospital I was given and told to bring her in to be admitted for assessment. We were assured last night that it'd be a case of just finding the anti nausea medication that works for her.

Ao, she was on a drip overnight and still sick this morning, was given an anti;nausea injection after that. She was so weak and i knew to expect that as my aunt and gran have died of cancer; but didn't know she would end up so exhausted that she couldn't speak.

So, I wanted to ask if anyone has experienced sickness so badly that this has happened and if so were you able to continue with agreed Chemo course?

Any advice appreciated!
