5 veggie recipes for people affected by cancer

3 minute read time.

Macmillan has a recipe collection for people affected by cancer. So for National Vegetarian Week this week, we have picked out 5 vegetarian recipes. In this blog, one of our information development nurses Paula shares these recipes, as well as some top tips.

These recipes are tailored to suit you at different times during and after your treatment. There are notes on each recipe to help you choose one that’s right for you.

Recipes

This image shows a bowl of bright orange lentils.

Lazy lentil soup
All the ingredients for this soup go into the pot at the same time so it’s good if you want a simple, healthy meal. This soup can also be blended to make it really smooth if you are finding it difficult to swallow or chew food.

This image shows a bowl of coconut and parsnip soup. It is creamy brown in colour.

If you have lost your sense of taste, this soup has garam masala and ginger to give it a stronger flavour.

This image shows a bowl of spring vegetable casserole. The vegetables are cut into chunks and are brightly coloured. Next to the bowl are some slices of garlic bread.

Spring vegetable casserole with garlic bread
This is a quick and simple casserole that is full of vegetables in a tasty sauce. If you have a dry or sore mouth, recipes with a sauce can be easier to eat. You can miss out the garlic bread if that helps too.

This image shows an oven dish filled with broccoli mornay. The broccoli florets are coming up through the sauce and the top is lightly browned.

Some extra ingredients in this recipe give it a stronger flavour so again it’s great if your sense of taste is affected. The extra calories in it can also help if you have lost weight during your treatment.

This image shows a summer pudding that has been cut into. The pudding is topped with berries, and the filling of berries is spilling om the berry juut of the cut. The sponge is slightly pink in colour from the berry juice.

A pudding packed with fruit. This recipe is good if you have a dry or sore mouth or difficulty swallowing or chewing due to the lovely fruity sauce.

You can find all of these recipes and more in our booklet Recipes for people affected by cancer. The booklet also has hints and tips about changing the recipes to make them suitable for you.
